Avocado Lime Sauced Pork Chops
David thought this was unbelievable and I thought it was good, but not great. It was certainly unique! The photo makes it look honestly a bit gross, but it definitely was good!
Ingredients:
- Pork chops
- Spices: 1/2 tsp paprika, 1/2 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp ground pepper
- 1 avocado
- 1/2 cup plain non-fat greek yogurt
- 1/4-1/2 cup milk
- juice from 1/2 of a fresh lime
- 1 tsp olive oil
Directions:
Combine all of the spices into a bowl and dip the pork chops into the bowl on all sides. Heat the olive oil in a pan over medium heat and let it get really hot (wait 2-3 minutes). Add the pork chops and cook about 5 minutes each side (or until cooked through). While the pork chops are cooking, prepare the sauce. In a bowl, mash the avocado with a fork. Next add the greek yogurt and lime juice and stir. Gradually whisk in the milk until you get whatever consistency you desire (I liked mine to be just a little runny). We served this with fresh corn cut off the cob and orzo (that we sort of all mixed together).*
*I made the orzo the way that the recipe recommends on the back of the box – It includes sauteing in a pan: fresh cut up tomatoes, tomato paste, and italian seasoning (I went salt free!), and then adding the cooked orzo to the mixture. It was delish!
