Baked Stuffed Chicken
This was really easy and quite delicious! You can use any type of cheese, but the extra sharp white cheddar really added a lot of flavor and uniqueness!
- 2 large chicken breasts
- 1/2 small tomato, chopped
- 1 cup spinach
- 1-2 oz of extra sharp white cheddar cheese
Preheat the oven to 350 degrees. Hold the slab of chicken down flat with your hand, and with the other hand cut a slit (pocket) into the side of the chicken. Stuff the whole with as much spinach and tomatoes as will fit. Then thinly slice the cheddar cheese and tuck it into the hole (trying to expose as little of it as possible so that it doesn’t melt out while cooking). Place the chicken on a pan and cook until cooked all the way through (at around 20 min, I bumped the heat up to 400 and cooked it for another 5 minutes or so). We served this with a fresh salad and some cherries and it was delicious!
