Chicken and Veggies
This was super simple and delicious!
- 1 package chicken strips or breasts
- 1/2 yellow onion, sliced thinly
- 2 garlic cloves, minced
- 1 roma tomato (or 1/2 regular tomato or a handful of cherry tomatoes), chopped
- 2 handfuls fresh spinach
- 1/8 cup crushed peanuts
- 2 T Balsamic
- 1 tsp olive oil
Place a drop of oil in two pans over medium heat. Cook chicken in one pan, while cooking the onions in the other pan. Once the onions start to brown, add the spinach, tomato, garlic and balsamic to the onions. Cook for a few minutes (1-2 minutes), add another dash of balsamic. Mix in 1/2 of the peanuts. Serve the veggies on top of the chicken and add the rest of the peanuts on top. We served ours with whole wheat cous cous and asparagus.
