Christmas Pepper Jelly
So this is a jelly which clearly means that it is loaded with sugar, but at least if you make it yourself it has less preservatives and is theoretically healthier. This turned out delicious, so enjoy!
Ingredients:
- 3 red bell peppers, finely chopped
- 1 jalapeño, finely chopped
- 1.5 Cups White Vinegar
- 6.5 Cups White Sugar
- 1/2 tsp Cayenne Pepper
- 4 oz Pectin
- 4 drops red food coloring
Directions:
Combine peppers, vinegar, sugar, and cayenne pepper in a large pot. Cook on medium until it is a rolling boil. Add the pectin, stir, and allow the mixture to boil for a full 5 minutes (in order to set the pectin). Remove the mixture from heat and add the food coloring. Pour the mixture into jars, seal the jars, and place them in the refrigerator overnight (they will not look ‘jelly-like’ until they have been in the fridge for awhile). Enjoy!
