David’s Favorite Tomatillo Salsa!
David says this is his favorite thing that I make (and it’s only 3 ingredients)! This goes wonderfully as a marinade or as salsa on top of tacos, etc.
- Tomatillos (8 or so large ones, or 10-12 if smaller ones)
- 2 garlic cloves
- 1 serrano pepper
Preheat the oven to 400 degrees. Place the tomatillos on a pan in the oven until they begin to brown and feel soft to the touch (as if they are going to pop) – about 15 min. Remove the tomatillos from the oven and peel the skins off. Throw all the ingredients (tomatillos, serrano pepper and garlic cloves) into a food processor or blender and voila! Best if chilled, but certainly delicious fresh and hot!
