Fresh Cod Dinner
This meal would have been amazing except our fish was not quite as fresh as we had hoped, so it was too ‘fishy’ tasting. However, if you get a fresh piece of cod, this WILL be delicious!
- 2 cod filets
- seasonings: 1 tsp chili powder, 1 tsp paprika, 1/2 tsp ground pepper
- 1 slice of an onion (to create strips on top of each filet)
- 4 thin slices of tomato (2 for each cod filet)
- 1/8 cup parmesan cheese
- 1 tsp olive oil
Mix all seasonings together on a plate. Press filets onto the seasoned plate. Heat 1 tsp olive oil in a skillet over medium heat. Add the seasoned filets to the pan (skin side down, so seasonings are on the top of the filet). Cover the filets with tomato and onion slices. Put lid on pan and cook until fish is white throughout. Turn the oven onto broil while the fish is cooking. Once the fish is just about done, transfer to a pan, sprinkle the tops with parmesan and broil for 1-2 minutes. Serve and enjoy! We served ours with asparagus, mixed brown rice, and mixed greens.
