Garden Fresh Bison Salad
We had some amazing veggies from the garden (lettuce, spinach, and radishes) so we decided that a salad was in order! I was going to make it vegetarian, but David was headed out on a long bike ride and said he wanted ‘meat’…..well it turned out DELICIOUS!

David added a few small cubes of sharp cheddar cheese to his and it was really delicious! No dressing needed 🙂
Ingredients:
- 1 lb bison
- 1/4 yellow onion, chopped
- 4 cups spinach/lettuce combo
- 1 roma tomato, chopped
- 3-4 small radishes, sliced
- 1 large carrot, sliced
- 1/4 of a head of broccoli, chopped
- 1 tablespoon chia seed
- 1/2 cup – 3/4 cup almonds
- mrs. dash garlic and herb seasoning
Directions:
All I did was cook the bison in a pan (no need to oil the pan or anything)! Once the bison started to brown, I added the onion and some mrs. dash seasoning (garlic and herb) and let the bison cook until it was brown crumbles. I filled a salad bowl with the lettuce/spinach and added the bison and onion combo to the salad and then put all of the rest of the ingredients on top! We paired it with a slice of whole wheat bread and some cantaloupe! yum!
