Ginger Pear Pork Chops

Ginger Pear Pork Chops

These were super delicious and a great way to have a sweet meal without adding a bunch of sugar!

  • Pork chops (3-4)
  • 1 T olive oil
  • 1 T unsalted butter
  • 2 T minced garlic
  • 1 diced pear
  • 1.5 cups low sodium chicken stock
  • 3 T apple cider vinegar
  • 2 T honey
  • 1/2 teaspoon rosemary
  • ground pepper, to taste

1.  Pour 1 T oil into a pan and heat over medium-high heat.  Add the pork chops.  All the chops to cook until browned on one side (3-5 min) then flip the chops.  Cook the other side of the chops for only 1-2 minutes. Then lower the heat to low and cook until cooked through, 5 to 15 minutes, depending on the thickness of the chops (chops are done when they reach an internal temp of 145 degrees). Once they are cooked, removed the chops from the pan and set them aside on a plate.

2.  Take the pan that was used to cook the chops and add the butter, ginger, and pear and cook over medium heat for 1 minute.  Next add the chicken stock, apple cider vinegar, and honey.  Boil vigorously until the liquid is reduced by 2/3 (about 5 minutes).  Add the rosemary and black pepper.  Pour the sauce over the chops and serve! Delicious!
