Greek Turkey Lettuce Wraps
These were AMAZING!!! One of my favorite dishes of all time I think, and literally took under 10 minutes to prepare! Double like!
Ingredients:
- 1 lb 99% lean ground turkey
- 1 tomato, chopped
- 1 cucumber, peeled
- 2 tablespoons pimientos
- 6 oz artichoke hearts
- 1 tablespoon fresh dill (I bought the tube kind so that it has a longer shelf life!)
- 6 oz plain fat free greek yogurt
- 1/2 cup feta cheese
- 2-3 garlic cloves
- lettuce wraps (we had giant pieces of spinach from the garden, but normally an iceberg head of lettuce or romaine stalks are the easiest)!
Directions:
Cook the turkey in a pan over medium heat until the turkey is cooked through (a minute or two before the turkey is all the way cooked, add the pimientos). In a food processor (or blender) prepare the tzatziki sauce by combining cucumber, dill, greek yogurt, and garlic cloves – turn it on and blend until smooth, set aside. Put the rest of the ingredients (tomatoes, artichokes, feta) in separate bowls on the table and serve!
