Ground Turkey Lettuce Wraps

This is one of our favorite dishes.  For some reason, this time it didn’t turn out quite as flavorful, so perhaps we used to put some cut up peppers or something in it, but either way it was still great! We love serving meals like this when we have company over because we have realized that any meal where people eat with their hands, makes them naturally more comfortable!

  • 1 lb lean ground turkey
  • 1 head lettuce
  • 2 long carrots, shredded
  • 1 cup cooked brown rice
  • 1 tablespoon ginger, minced
  • 1 large red bell pepper
  • 1, 10 oz can sliced water chestnuts
  • 1/2 cup low sodium chicken broth (use the brand Kitchen Basics, its much healthier than the rest!)
  • 2 tablespoons hoisin sauce
  • 1-2 teaspoons 5-spice powder
  • fresh basil


Cook brown rice separately (and finish before starting the meal).  Put a splash of water in a pan, add turkey, and ginger (heat over medium heat) until the turkey is cooked through (around 6 minutes).  Stir in the rice, bell pepper, water chestnuts, broth, hoisin sauce, 5-spice powder.  Peel apart lettuce head into sections to serve as wraps.  Fill the lettuce sections with the mixture from the pan, top with carrots and basil.  Enjoy!
