Homemade Pad Thai
This recipe entails quite a lot of ingredients, but you can always buy the ‘pad thai’ that’s in a box in the asian aisles at grocery stores, but make sure to buy the one that is labeled low sodium…….that provides you with the noodles and the sauce, so all you have to do is add the other stuff to the pan! (for a boxed item, it is surprisingly not terribly high in sodium). I will give the recipe from scratch here though:
- For the sauce: 1/4 cup low sodium chicken stock (use the brand called Kitchen Basics I think? It’s the healthiest!), 3/4 cup brown sugar, 1 tsp chili powder, 1 tbl soy sauce, 1 tbl fish sauce, 1-2 tbl red curry paste
- thai noodles
- For the rest:
- 2 tbl olive oil
- 2 eggs (scrambled)
- shrimp, pork, chicken, or keep it vegetarian if you want!
- 1/2 cup finely chopped peanuts
- veggies (2 cups bean sprouts, cut up cherry tomatoes, 2 chopped up scallions, cilantro, and lime wedges)
For the sauce, mix all ingredients together in a bowl and set aside. Place Thai noodles in a bowl and soak them for 25 min in very hot water. Put 2 tbl of oil in a pan. Add 1-2 eggs (scrambled), and add shrimp (or pork, chicken, whatever) for 4-7 min. Next add the noodles and peanuts to the mixture for another 4-7 min. Lastly, add all the veggies (bean sprouts, cut up cherry tomatoes, scallions). let it sit for 2-3 min and serve with cut up cilantro on top and a lime wedge! One of the most delicious recipes I have ever made hands down!
