Honey Whiskey Salmon Salad

I marinated this salmon and made a delicious salad!

Marinade ingredients:

  • 4 salmon filets
  • 4 shots honey whiskey
  • 2 T brown sugar
  • juice of 1/3 lemon

Directions:

Mix all the ingredients into a ziploc bag and allow to sit for 1 hour minimum.  Preheat the oven to 375 degrees and cook for 18-20 minutes (or until salmon is flaky, but moist).

The salad ingredients that I paired it with: mixed baby greens, heirloom cherry tomatoes, shredded carrots, diced onion, diced mini bell peppers, pistachios, dried pomegranates, goat cheese.  The dressing that I offered was a sesame ginger (make sure to use sparingly!)
