‘Meat’loaf (ground turkey meatloaf)

I’ve never even had meatloaf before, but this was a big hit!  David ate the whole pan and had none for lunch the next day!



  • 1 lb lean ground turkey
  • 3/4 yellow bell pepper, chopped
  • 1/2 jalapeño, diced
  • 1/2 tomato, diced
  • 1/2 cup yellow onion, chopped
  • 1/2 cup dried bread crumbs
  • 1/4 cup salsa
  • 2 eggs
  • Juice from 1 slice of a lemon
  • ground pepper, to taste


Preheat oven to 350 degrees.  Combine all ingredients in a large bowl (except the tomato).  Mix with hands until thoroughly mixed and consistent.  Press mixture into a loaf pan (or a pan with higher sides).  Drop the tomato pieces on top.  Bake for about 1 hour (until the edges start to brown and when cut into, it looks cooked throughout).
