Pesto Red Pepper Salmon
This turned out to have fantastic flavor and it’s a super easy way to spruce up a salmon dish!
- 2 salmon filets
- pesto (enough to coat the tops of the salmon)
- 1 packet of red pepper flakes (the small packets you get when you order pizza!)
- 1 tomato, sliced
Preheat oven to 400 degrees. Coat salmon in pesto, then sprinkle red pepper flakes on top. Lastly, place sliced tomatoes evenly on top. I covered a pan in tinfoil (just for easier cleanup), but you can always just cook on the pan. Place the salmon in the oven for 15-20 minutes (or until cooked all the way through) and serve! I served it with gnocchi (since I had some homemade pasta sauce leftover) and broccoli!
