Pork Cutlets with Orange Cherry Sauce
Pork cutlets are cheaper than pork tenderloin and just as yummy! This recipe was great because I had all of the ingredients at home with the exception of the pork cutlets, themselves!
Ingredients:
- 2 pork cutlets
- 1/4 tsp pepper
- 1/4 cup all-purpose flour
- 1/2 cup orange juice
- 1/3 cup dried cherries
- 2 tsp dijon mustard
Directions:
- Sprinkle pork cutlets with pepper. Place flour in a large resealable plastic bag. Add the pork, shake to coat, and set aside.
- In a small saucepan, combine the orange juice, dried cherries, and mustard. Bring to a boil; cook until liquid is reduced to 1/2 cup.
- In a large skillet over medium heat, cook pork cutlets in butter for 5-7 minutes on each side or until cooked all the way through. Serve with sauce poured on the top!
We paired this with red quinoa, broccoli, and a slice of whole grain bread! Very delicious and unique flavors!
